Chimarrão is the infusion prepared with Erva Mate dry leaves in hot water. The flavor of brewed Erva Mate is strongly vegetal, herbal, and grassy, reminiscent of some varieties of green tea. It is more popular in the South Brazil.
Erva Mate (Ilex paraguariensis) is a species native to subtropical South America in southern Brazil. The Erva mate plant is a shrub or small tree growing up to 5 meters tall. The leaves are evergreen, 7–11 cm long and 3–5.5 cm wide. The leaves are used to make a infusion hot tea named Chimarrão or its cool version Tereré.
