Chimarrão is the infusion prepared with Erva Mate dry leaves in hot water. The flavor of brewed Erva Mate is strongly vegetal, herbal, and grassy, reminiscent of some varieties of green tea. It is more popular in the South Brazil.

The leaves are evergreen, 7–11 cm long and 3–5.5 cm wide. The leaves are used to make a infusion hot tea named Chimarrão or its cool version Tereré.
